Class 3 Visit Dorringtons

We went to Dorringtons Bakery on Wednesday 23rd September, in Sawbridgeworth. It is their 90 years celebration for their 14 shops around Essex such as in Saffron Walden, Newport and Harlow. They have 10% wastage because if some bread or cakes are not sold the day they are made they are thrown away because they can’t risk them being stale or mouldy. The bakery has a small shop at the front of the building and a large factory at the back where they made all the bread, cake and biscuits.

 

Outside the factory is a large flour silo which can hold up to 50 tons of flour with a tube going into a container inside the building where it is used to make the bread.

 

Each day they make 3000 sausage rolls, 300 Cornish pasties and 1000 loaves. These are delivered to many different shops around the county.

 

They also have a variety of ovens in the building as well as a rolling machine or a steaming machine to give the bread a crust. There was also an oven which rotated for the meringues.

 

The night shift work times were 8 o’clock pm to 4 o’clock am and in that time they made the hundreds of sausage rolls, Cornish pasties, cakes and loaves.

 

We then went into the fridge and freezer where they put the bread which wasn’t ready to be cooked. They were VERY COLD!

 Lastly we collected some fresh loaves of bread, a cookie each and a ginger bread man to take home. YUM!
